This post is all about how to make Cookie Puff Pastries.
If you enjoyed the viral cookie croissant, AKA le crookie, then you will LOVE these cookie pastries. Each pinwheel has layers of flaky puff pastry intertwined with chocolate chip cookie dough.
For this recipe, you will need only three components: two sheets of puff pastry dough (one box), chocolate chip cookie dough, and one egg. It’s optional to sprinkle each one with powdered sugar, as they taste incredibly delicious on their own!
Check out the easy recipe steps below. These sweet treats can be made in no time, and your house will smell good, too.

Ingredients You’ll Need:
- 2 Puff Pastry Sheets, one box
- 16 ounces of Chocolate Chip Cookie Dough
- 1 Egg
- Powdered Sugar (optional)
Equipment Needed:
- Oven
- Pastry Brush & small cup (for egg wash)

How To Make Cookie Puff Pastry Pinwheels, Step-by-Step

Step 1: Preheat the oven to 350°F.
Step 2: Line a baking sheet with parchment paper. Unfold the first (cold) pastry sheet onto the parchment paper. Alternatively, you might have purchased a single sheet like the one shown above. Either way, unfold the sheet onto a flat surface.
Step 3: Grab the cookie dough and cut it into small squares. Using your fingers, press it evenly onto either the single sheet of puff pastry or, if it’s one large sheet, onto half of the sheet. Before flattening the cookie dough evenly onto the sheet, it helps if it’s at room temperature.

Step 4: Place the second layer of puff pastry on top, or fold the other half of the sheet onto the cookie dough. Gently press down with your hands.

Step 5: Cut the dough into strips less than one inch wide. You should get about ten strips. I got nine here, but I found the puff pastry dough cooks thoroughly when the strips are cut less than one inch wide, yielding about ten strips.

Step 6: Twist each strip of dough. It does not have to look perfect.

Step 7: Take each twisted strip of dough and twist and tuck it into a small round circle. It should look like a swirl of twisted dough. Be sure to press and tuck in the last piece of dough from the strip so it keeps a tight shape while baking.

Step 8: Add 1 egg and 1 tablespoon of water to a cup, then whisk thoroughly. Using a pastry brush, coat the tops of each pastry with a thin layer of egg wash.

Step 9: Bake the pastries at 350°F for 20 to 30 minutes, until golden brown. Remember, every oven works differently.
Step 10: Remove the baked pastries from the oven and let them sit on the hot sheet for about 5 minutes before transferring them to a cooling rack.
*Dusting the Cookie Puff Pastry Pinwheels with powdered sugar is optional. Enjoy!
FAQs
What is the secret to good puff pastry?
The puff pastry dough must remain cold so the layers stay intact and the dough puffs up in the hot oven. Using minimal flour (if you flour the surface) and a sharp knife also helps.
Is egg wash necessary for puff pastry?
The egg wash will give the puff pastry a golden sheen after baking. But I have to say I haven’t used egg wash very often, and the baked dough still manages to have a golden hue.
