– Self-Rising Flour, 2 Cups (plus some extra for dusting and kneading). – Plain Greek Yogurt (full-fat), 2 Cups.
– Nonstick Pan, Cast Iron Skillet, Or Griddle Pan – Measuring Cups – Mixing Bowl – Spoon Or Spatula – Rolling Pin – Sharp Knife – Non-stick Cooking Spray Or Extra Virgin Olive Oil
Add the flour and yogurt to a bowl. Be sure to spoon and level the flour when measuring to avoid excess flour. Mix the ingredients. Add the optional herbs at this time and mix.
Flour your hands and knead the dough for a couple of minutes to form a ball. The dough will be sticky.
Place the ball of dough onto a floured surface. Lightly flour a sharp knife and cut the ball into eight equal parts. I initially cut the ball into four parts and then cut each portion in half, which gave me eight parts.
Using a rolling pin, roll out each piece of dough into an 8-inch circular shape. Because the dough is sticky, I floured my hands, took one piece, and formed it into a ball before placing it on a lightly floured surface to roll out.
Add non-stick cooking spray to the pan or brush each circular piece of dough with olive oil (on each side) before placing it in the hot pan. Fry each flatbread piece for a few minutes on each side until golden brown. You’ll know the first side is ready to flip once the dough starts to bubble on top.
For best results, serve this 2-Ingredient Flatbread warm. Top each piece with butter, garlic butter, or brush with olive oil and then sprinkle with sea salt.
