  • 1/4 tsp Salt

Instructions

How To Make Blueberry Goat Cheese, Step-By-Step

  • Add the blueberries, sugar, cornstarch, lemon juice, salt, and thyme sprigs to a medium saucepan.
  • Stir the ingredients consistently over medium heat for about five to seven minutes. The berries will begin to release their juices, and the sauce will thicken (but it should still be a little runny). Do not boil the berries. Remove the pan from the stove and set aside to cool. The compote will thicken more as it cools.
  • Place a large piece of plastic wrap on the counter and add 1/2 cup of the cooled berry sauce down the middle in a rectangular shape.
  • Place the goat cheese log on top of the berries.
  • Add another 1/2 cup of berries to the goat cheese log. You will have about one cup of berry compote left over to add to the crostini, or you can place it in a serving dish with the blueberry goat cheese. Extra berries are appreciated when serving this appetizer log since goat cheese tastes tangy.
  • Begin wrapping the log tightly in plastic wrap. Fold one end over first.
  • Then, wrap the next end.
  • Wrap up the ends of the blueberry goat cheese tightly to ensure no air is trapped inside the log.
  • Turn the cheese appetizer over on its other side and put it on a small dish. Place it in the refrigerator to set up for one to two hours. Unwrap the cheese log carefully and place it on a platter. Allow the chilled log to set out at room temperature for 15 minutes before serving so the cheese is easy to spread onto bread, crostini, or crackers.

How To Make Optional Crostini, Step-By-Step

  • Thinly slice (1/4 inch thick) a French baguette (8 to 10 ounces) and place the pieces on a baking sheet lined with parchment paper.
  • Brush a generous amount of extra virgin olive oil on each bread slice.
  • Sprinkle each slice with sea or kosher salt.
  • Bake at 400 degrees F for 5 to 7 minutes and serve warm!
